My Story

I’ve been in the food industry for over 13 years. Since I was young, I have always had a passion for baking. It has been a huge part of my family and it all started with my mom and oma, helping them bake. In my early teens I got my career jumpstart by baking at local markets and artisan festivals in Tofino, where I was born and raised.

I’ve been baking ever since!

In my late teens I got my first, real baking job and started working at the renowned SOBO restaurant with Pastry Chef Jennifer Clarkson, as assistant baker. After nearly two years, I enrolled in the Professional Baking and Pastry Arts Program at Vancouver Island University.

After graduating, I returned to my hometown of Tofino and went on to work at the prestigious Point Restaurant at the Wickaninnish Inn, Relais & Châteaux, refining my baking and decorating skills and getting my first taste of molecular gastronomy (food science) with Pastry Chef Matt Wilson.

In 2012 I decided to officially move away from home and found myself here, in Victoria. I started working at De'lish Fine Foods and Catering in Oak Bay, before meeting my amazing husband. It was then I started working at My Chosen Cafe, helping them to open the Sugar Shack. It was a challenging but very rewarding experience, since creating a menu for a bakery, and testing all the new recipes, and testing and retesting, until they were perfect, was something I had only read about in baking school. 

Classic Cake Co. is a home based cakery located in Langford. I create delicious, whimsical and elegantly designed cakes and baked treats in small batches to focus on quality and detail—Specializing, mainly in custom Swiss meringue buttercream cakes. I love trying new techniques and incorporating them into my clients' dream cakes. I am FoodSafe Level 1 certified, and am able to cater to some dietary needs and intolerances (dairy, gluten, sugarless, egg free, vegan and nut free). Everything is hand made from scratch, with high quality ingredients. I design and make high end, edible art at a competitive price. Everything is meticulously made with love and care for others to enjoy for their special occasions!
